Hi
Ive started importing Daz characters into Blender
I'm new to Blender, and I'm starting to get to grips with the very basics. Youtube is great for learning but I find myself jumping all over the place and sometimes going down a rabbit hole.
Could anyone recommend a good structured training video (free or paid) - particularly on rigging and animation, from beginning to end

Good question. Blender has a lot of features. I use Diffeo for transferring Daz characters to Blender and found these Youtube videos quite helpful:

If you are interested in general trainings regarding rigging and characters, there is a lot of information available on Youtube, CG Cookie, CG Boost and Udemy.
A lot of these trainings are focused on character generation from gound up. For realistic characters I like Human
by CG Cookie, which is a paid course.

I was going to reply "No, there isn't" until you said the magic words: Rigging and Animatin. To me, there's no question, Pierrick Picault is your guy. "The Art of Effective Rigging" and "Alive" are the best tutorials I've ever gotten through. But please accept early on that these are simply not light subjects and you will probably have to re-watch several times before the important point he is trying to teach you really sinks in. And sometimes it is difficult to realize the significance of a point until after the lightbulb comes on. It could honestly take months to get through both, but at least for me, it was the best decision I've ever made, after the decision to seek better animation tools in the first place.
After that, you'll almost certainly want to watch everything you can find on Auto Rig Pro, which I find superior to Rigify because of Quick Rig (which allows you to generate an IK rig from your unaltered G8 armature), and also the Animation Layers addon, which is a game changer.
