That's a nifty animation and shows me how this plugin can be so useful. I had my doubts when it was first requested and created. You'd have a hard time making a motion path for that track.
I did work on a general case plugin to convert any modifier or other based motion into key frames. I'll dust that off, scrape off the rust, and make sure it works before uploading it to my Laboratory. I appear to have messed around with it and broken it while using it for unrelated testing.
As for other improvements to Follow Polyline I'm not sure about banking or aligning with the normals. Banking used by the motion path animation method is a trick and not based on real physics. I have got improvements along those lines to do more realistic steering and look into banking with my Wheels plugin as a possible future project. My schedule is pretty full for now except for small jobs I can squeeze in. Without some physics I think banking should be done manually as you have.
